The first thing I learned is that bok choy is a cool-weather crop, which means it thrives in spring and fall. I started my first batch in early spring, right after the last frost. I picked a sunny spot in my garden, though bok choy can also grow in partial shade. If you don’t have much space, don’t worry, bok choy grows well in containers too! I made sure the soil was loose, rich in organic matter, and well-draining. I planted my seeds about ½ inch deep and spaced them about 7 inches apart. Within a week, tiny green shoots started to emerge. Remember to water daily! Make sure to not drown the plants, but enough for the soil to be moist. After about 50 days, my bok choy was ready to harvest.
